The ingredients needed to make Gizdodo:
  1. Take 3 Ripe Plantain
  2. Prepare 1/2 kg Gizzard
  3. Make ready 2 Fresh Pepper
  4. Prepare 1 Red Bell Pepper
  5. Prepare 3 Fresh Tomatoes
  6. Get Garlic & Ginger
  7. Get to taste Salt
  8. Get 1 stock cube
  9. Take Veg oil

So you bet I also love Dodo gizzards☺. Gizdodo as I like to say, is basically a fusion of chicken gizzards and plantain (also known as dodo) stewed in a peppered sauce.

Instructions to make Gizdodo:
  1. Remove plantain peel and dice into 2 or into 4; heat up veg oil and fry plantain, remove from oil once it’s brown and drain inside paper towel then set aside
  2. To steam the gizzard, add chopped onions, pepper, garlic and ginger; then add salt and stock cube with any seasoning of your choice; do not add water
  3. Cook Gizzard and remove from heat once it’s cooked through, drain any excess water
  4. Heat up oil and fry gizzard; remove once it’s fried and brown, sieve and reduce the oil, place pot back on heat and add the diced onion, tomatoes and tatashe; allow it fry for about 5 minutes
  5. Add stock and salt, stir in dried herbs and then add gizzard, stir and finally add your fried plantain
  6. Mix everything together cook for another 2 minutes, then turn off heat. Serve with your jollof rice
