  1. Peel and cut plantain to cubes, set aside
  2. Cut the gizzard to small size
  3. Heat oil in pan on fire, salt the plantain and deep fry till golden brown
  4. Remove from fire and drain oil
  5. In another pan, add little oil(enough for sauce), add the red pepper stir fry, add the chopped onion as you stir fry on low heat
  6. Add in seasoning, salt stir and put the gizzard as you stir fry for some minute
  7. Off the heat set aside
  8. Dish out the fried plantain and pour in the gizzard on the plantain
  9. Simple gizdodo ready to be enjoyed like that or as side dish with rice
