Form into patties and place them on wax paper. Create a depression in the center of each patty to make sure they cook evenly. I added fresh oregano and chives to boost the flavor and impart a freshness. Add chicken, crumbs, Parmesan, eggs, herbs and seasonings; mix well.

  1. In a food processor, ground the chicken to paste.
  2. To the ground paste add 1 egg, bread crumbled, garlic, pepper powder and salt and roll it into good balls and flatten it to form patty.
  3. In a pan with little oil fry both sides of the patty nicely.
  4. In the same pan fry the burger buns on both sides.
  5. Spread chilli mayo to both sides of the buns and start layering it with onion slice, tomato, the patty, cheese sheet, onion slice,lettuce, pickled vegetables if any and top it with other slice of bun.
  6. Use a toothpick to keep everything in order. Add ketchup in the layers if required..
