Add mushrooms, chile, ginger, vinegar, and soy sauce to stock. Gently simmer chicken thighs or chicken breast in a broth made with water or stock, spices, onion, and garlic. Simmer the cooking liquid until reduced. Toss the shredded chicken with the concentrated cooking liquid for extra flavor and moisture.

- Prepare the vegetables. (Soak in water to remove bitterness, remove tough strings from the peas, peel, etc…)
- Heat oil in a pot, and fry the garlic until fragrant. Break the red chili in half, add to the pot, and fry briefly.

- Simmer for about 20 minutes over low heat. Taste it, and add salt and pepper to adjust the flavour. Turn off the heat, and add the lemon juice.
- Once cooled, turn the heat back on, and let the vegetables absorb the flavour.

Add all ingredients except the chicken skins into a pot and turn on the heat. Once it comes to a boil, add the chicken skins and reduce the heat to very low.
