  13. Prepare 1 tbsp ■Soy sauce
  14. Prepare 1 Green onions (finely sliced)

The taste is unique due to the combination of ingredients. It is also a healthy soup which only involves a few components. Bring it to boil, and then immediately turn it to down to a slow simmer. The combination of lotus root with pork ribs and peanuts is a classic Chinese soup.

Steps to make Lotus Root Dumplings (Clear Soup Version):
  1. Chop the shiitake mushrooms finely. If you are not a vegetarian, you can use 50 g of peeled and chopped shrimp instead.
  2. Peel the lotus root, cut into half lengthwise and soak in water with a little vinegar (about 1 teaspoon of vinegar with enough water to cover the lotus root) to get rid of the astringency.
  3. Grate the soaked lotus root and squeeze it out lightly to eliminate some of the moisture. Add the shiitake mushrooms or shrimp from Step 1 to the grated lotus root in a bowl.
  4. Add the seasoning ingredients to Step 3, and knead gently with your hands to bring everything together. Taste and adjust the seasonings (you can add a little sugar at this point.) If you are not a vegetarian, add 1/2 of an egg white to make the dumplings light and fluffy.
  5. When the flavor is to your taste, form the mixture into about ping-pong sized dumplings. I could make 8 to 9 dumplings with these ingredients.
  6. Wrap up each dumpling in a piece of plastic wrap. Twist the ends tightly.
  7. Microwave the wrapped dumplings from Step 6 for 2 minutes, then take off the plastic. Your chewy lotus root dumplings are done!
  8. Make the clear soup: Add the flavoring ingredients to 500 ml of dashi (make the dashi stock with kombu and shiitake mushrooms, or use dashi stock granules.)
  9. Heat up the Step 8 mixture, add the Step 7 lotus root dumplings and bring to a boil (don't heat for too long). Ladle into serving bowls, sprinkle in some chopped green onion and it's done.

Bring it to boil, and then immediately turn it to down to a slow simmer. The combination of lotus root with pork ribs and peanuts is a classic Chinese soup. In Cantonese, we call lotus root soup ling ngau tong (莲藕汤). These are vegetable gyoza dumplings made with lotus root. Minced lotus root adds a crunchy texture to this dish.

Your mood can be elevated by eating peanuts, almonds, cashews, sunflower seeds, pumpkin seeds, etc. This is because seeds and nuts have a lot of magnesium which raises your brain’s serotonin levels. Serotonin is the “feel good” chemical that tells your brain how you feel at all times. The more of it you have, the better you are going to feel. Not only that but nuts, specifically, are a terrific protein food source.

If you wish to overcome depression, you should eat some cold water fish. Salmon, herring, tuna fish, mackerel, trout, etc, they’re all loaded with omega-3s and DHA. These are two things that truly help the grey matter in your brain run a lot better. It’s true: eating a tuna fish sandwich can greatly raise your mood.

Grains can be great for fighting a terrible mood. Teff, barley, millet, quinoa, etc are all good for helping you feel better. They help you feel full also which can actually help to improve your mood. Feeling hungry can truly make you feel awful! The reason these grains are so good for your mood is that they are not difficult for your stomach to digest. They are easier to digest than other foods which helps bring up your blood sugar levels and that, in turn, improves your mood.

Your mood can actually be helped by green tea. You were just expecting to read that, weren’t you? Green tea is chock-full of an amino acid called L-theanine. Studies have discovered that this amino acid essentially stimulates brain waves. This helps better your mental sharpness while calming the rest of your body. You probably already knew it is not difficult to be healthy when you drink green tea. Now you know that applies to your mood as well!
