Instructions to make Brinjal Kadhi with bajra roti:
- Wash and cut Brinjal into small pieces.
- Cut green chillies into small pieces
- Make paste of garlic and ginger.
- In a pan add ghee. Put mustard cumin and Fenugreek seeds along with whole red chilli. Once splutters add ginger garlic and green chillies
- Add chopped Brinjal and saute it for 2 minutes.
- Add all masalas and cover and cook it for a while.
- Add besan to buttermilk. Add pinch of turmeric, Red chilli and salt to it. Blend it nicely.
- Add this to Brinjal pan and cook it for 10 minutes. Stir it in between.
- Serve Brinjal kadhi with bajra roti, white butter and jaggery.
