Sanjeev Kapoor. as i was explaining earlier, thepla recipes are typically made and served as travel meal. the dough for thepla is pre-mixed with spices and herbs which makes it a complete and satisfying meal. in this case, i have added grate of bottle gourd with spices like red chilli powder, coriander powder and cumin. You can also use the water squeezed out from the bottle gourd for this. Divide the dough into equal-sized balls and roll into theplas. Bottle gourd has high water content and can leave the dough soggy if the water is not squeezed and drained out of it.
Instructions to make Bajra-Dhudhi (bottle gourd) Thepla:
- In mixing bowl add bajra flour, wheat flour, grated dhudhi, chopped coriander leaves,green chillies ginger paste, salt,oil, asafoetida, cumin seeds and sesame seeds mix and add curd and bind to semi soft dough.Make 12 equal portions balls.
- Flatten each prepared ball, roll out with help of wheat flour 4-5" diameter roti. Roast on tawa with oil on both sides. Similarly prepared all bajra- dhudhi theplas.
- Serve/ Relish Hot Nutritious Bajra-Dhudhi Thepla with chundaa,gujarati kadhi,tomato- sev subzi, khichdi for complete meal.
