Egusi is a West African name for the seeds of plants like squash, melons, and gourds that, when dried and ground become a staple ingredient in many West African dishes.

The ingredients needed to make Egusi soup and Semivita:
  1. Get 2 cups Egusi (blended)
  2. Prepare Blended tomato, pepper, onion
  3. Take Crayfish (blended)
  4. Prepare leaf Washed Bitter
  5. Prepare Beef
  6. Make ready Kpomo
  7. Prepare Season cubes and Salt to taste
  8. Prepare Palm oil
  9. Get Semovita flour

It is a great soup for those who like to try something different every once in a while. Ground Egusi seeds give this soup a unique color and flavor. If you can't find Egusi seeds, you can substitute pumpkin seeds. Vegan Egusi soup is a vegetarian friendly version of the typical egusi soup.

Instructions to make Egusi soup and Semivita:
  1. Wash the beef very well, put then in a pot, add season cube, salt and onion to taste. Then allow to simmer until it's cooked.
  2. Note, u also wash the Kpomo properly, slice to preferred sizes and add to the boiling beef when u the beef is almost getting cooked.
  3. Soak the Egusi in water 2mins.
  4. Put a washed dry pot on fire to heat up 30sec and pour in the palm oil, allow to heat up for 2mins, add the blended tomato, pepper and onion, Allow to dry fry until there is no more water. Then pour in the soaked Egusi and fry until the water completely evaporates (by CONSTANT stirring).
  5. You will then Add little water, the boiled meat and kpomo and allow to simmer for 3mins. Add in your season cubes, crayfish, salt to taste, stir very well and allow to simmer for 3mins again. Finally, you add the bitter leaf for 2mins. Soup is ready!๐Ÿ˜
  6. For the Semovita, you pour desired quantity in bowl, add warm water and mix properly until it completely desolves. Then, heat up water (based on the quantity of semovita flour mixed). Pour in the mixed semovita into the boiling pot of water and stir very well until it thickens without lumps. U are good to serve.
