Egusi Soup is also called melon soup because it is made from melons. It is very rich in protein and natural fats. Egusi soup can be consumed with most swallow meals including Eba (Garri), Semovita, Pounded Yam, Tuwo and Wheat. It can also be spiced up with assorted meat oats, fish, crayfish, locust beans and other delicious ingredients.

Instructions to make Egusi (melon soup) and semovita:
  1. Boil the beef with seasoning/ salt until soft and tender.
  2. In separate pot, wash and boil the dried fish, stock fish with seasoning, add the fresh pepper. Cover and allow to boil.
  3. Add the beef with the dried fish and stock fish, add palm oil, cover and allow to boil until the palm oil blends in.
  4. In a bowl, pour the grinded melon seeds, cut some onions and mix together to form a thick paste.
  5. Use a spoon, cut the egusi mixture into small portion and add to the pot, do not stir after putting, cover and allow to dissolve. After 10-15mins, if the egusi has dissolved, add the crayfish and washed pumpkin leaves. Stir together. Taste for seasoning, add if necessary.
  6. Your Egusi soup is ready to be eaten with any swallow of your choice. Enjoy!!!
