- Drain the lotus root and combine it in a pot with the water, vinegar, and sugar. Turn on the heat, cover with both a drop lid and regular lid, and simmer for 3 minutes.
- Let it cool in the pot, then it's ready to serve.

Submerging the peeled and sliced lotus root in water containing acid will prevent discoloration. Bring water to boil in a sauce pan and add lotus root. Return to boil and let it cook for three to four minutes, until cooked through but still slightly crunchy.

These foods fill you up better and that can help you with your moods as well. Feeling hungry can be a real downer! These grains can elevate your mood as it’s easy for your body to digest them. These foods are easier to digest than others which helps promote a rise in your blood sugar which in turn brings up your mood to a happier place.
