- Put an egg and sprinkle of Parmesan in a bowl and beat
- Cook pasta according to instructions. Drain 1 min before cooking time. Add to sauce. Add beaten egg and mix for 1 min. The heat from the pasta cooks the egg and makes it nice and creamy. Enjoy with extra Parmesan :)
In a large skillet over medium heat, add the olive oil. Drain the pasta, reserving some of the cooking water. Add the pasta to the frying pan, together with half of the Parmesan and the basil. Stir the zucchini mixture together with the pasta, adding a small amount of the reserved cooking water to loosen the mixture. Serve immediately with the remainder of the Parmesan.
