  3. Heat a casserole with water and place a steamer rack inside. Once the water boils, place stuffed lotus root inside and steam for 15 mins

Dust the sliced lotus roots on one side with some corn flour. Place one ball of filling on dusted surface, flatten it down slightly and arrange on a heatproof plate. Repeat with the rest of the sliced lotus root and the filling. Plate up the lotus root mixture and place the lotus root slice and dried scallop on top as a garnish. Put the sliced lotus root into vinegar water as you slice it, as described above.
