  1. In a bowl, mix fish sauce, sugar, vinegar, garlic and ginger. Set aside.
  2. Peel the whole box of tamarind. Put tamarind in a big bowl. Pour 1/3 of the mixture of fish sauce on tamarind. Use a fork(or hands) to mash the tamarind to extract the meat. After a while, you can hear the seeds separating from the fruits.
