- Turn the oven to 200C.
- Then in a pan, add the butter and heat.
- Next add the onion, sprinkle with a little salt and fry for 3-5 minutes or until the onion has softened. Once cooked let it cool.
- Roll the ready made pastry slightly thinner to approximately half the size.
- Using a pastry cutter, cut the pastry to size. (I used a Yorkshire pudding tray which fit the cut pastry perfectly.)
- Spray the tray with oil before transferring the pastry into the trays. Then add the cut pastry.
- Spoon into each tray about 1 tablespoon of the cooked red onions.
- Add the goat's cheese on top and sprinkle with thyme.
- Brush the edges with the egg. And transfer to the oven.
- Cook for about 15-18 minutes.
Divide the onion mixture between the pastry cases, pour over the egg mixture so it comes almost up to the top. Place a goats cheese round on each tart and garnish with a sprig of rosemary (if using). Allow to cool slightly before turning out and serving.
