  5. Using a pastry cutter, cut the pastry to size. (I used a Yorkshire pudding tray which fit the cut pastry perfectly.)
  6. Spray the tray with oil before transferring the pastry into the trays. Then add the cut pastry.
  7. Spoon into each tray about 1 tablespoon of the cooked red onions.
  8. Add the goat's cheese on top and sprinkle with thyme.
  9. Brush the edges with the egg. And transfer to the oven.
  10. Cook for about 15-18 minutes.

Divide the onion mixture between the pastry cases, pour over the egg mixture so it comes almost up to the top. Place a goats cheese round on each tart and garnish with a sprig of rosemary (if using).
